A few years ago, inside a hundred year old bakery in Taleigao, the wood-fired oven still burned, the poder still cycled through village lanes at dawn, and bread still cooled on gunny sacks laid across the floor. Yet rising costs, labour shortages and shrinking margins cast a long shadow over this heritage craft. Has the situation changed today, or does the fate of Goa’s daily bread still hang in balance?
